by Иван Звездев
Dish type: Main courses
Preparation time: 45 min
4 Servings
250 g chicken meat
2 tbsp soy sauce
1 tbsp sweet soy sauce
1 onion
2 garlic cloves
1 carrot
2 tbsp oyster sauce
100 g cabbage
2 peppers
1/2 tsp salt
1/4 tsp sugar
5 tbsp oil
For the noodles:
270 g flour
25 g starch
1 egg
2 g salt
2 g baking soda
1/2 tsp oil
110 ml water
Preparation
1. Make the noodles with a Philips pasta maker and the fine spaghetti (vermicelli) disc. Add the dry ingredients listed in the recipe to the machine. Put the egg, oil and 110 ml cold water into the measuring jug.
2. More water may be needed: the machine indicates the exact amount of liquid. Switch it on and gradually add the liquid. Place the noodles as they emerge onto a tray and dust with a little flour to prevent sticking.
3. Cut the chicken into bite-sized pieces and put in a bowl. Season with salt and 1–2 tbsp soy sauce. Mix well.
4. Cut the peppers, cabbage and carrot into strips. Finely chop the onion and garlic. Heat 3–4 tbsp oil in a wok or deep frying pan and add the chicken over high heat.
5. Fry for 1 minute without stirring. Add the onion and stir-fry for 1 minute. Add the carrot, peppers and garlic and stir-fry over high heat for 5–6 minutes.
6. Add the oyster sauce, sweet soy sauce, salt and sugar. Fry for a few more minutes until the chicken is cooked.
7. Meanwhile, cook the noodles in boiling salted water for 5–6 minutes. Drain and immediately add them to the pan with the chicken.
8. Add the sliced cabbage.
9. Stir everything together for another 2–3 minutes, then serve.
