500 g flour
3 eggs
20 g fresh yeast (or 1 sachet dry yeast, 1 tsp)
1/2 cup milk
1/2 tbsp sugar
1/2 tsp salt
200 g white brined cheese
125 g butter
1 egg for brushing
Put the flour in a bowl and add the eggs beaten with a fork. Add the yeast, salt, milk, 1 cup water and sugar. Knead into a firm dough.
Divide into 3 pieces and roll each into a rectangle. Brush the first with one third of the melted butter.
Sprinkle with one third of the crumbled cheese. Add the second rectangle and another third of the butter and cheese.
Top with the third rectangle, add the remaining butter and cheese and roll all the layers up together.
Cut off both ends of the roll and place them in the centre of a 28 cm baking tin.
Cut the remaining roll into triangles and stand them around the centre pieces.
Brush with egg and place on the middle shelf in a cold oven. Heat to 220°C and bake for 10 minutes.
Reduce to 180°C and bake for 40 minutes. Cover with a cloth and leave to rest.
