500 g filo pastry
50 g butter for greasing
For the filling:
300 g cow’s milk white brined cheese
3 eggs
200 g plain yogurt (1 cup)
80 ml oil (1/2 cup)
2 tbsp flour
1 tsp baking powder
Whisk the eggs with the yogurt and oil.
Mix in the flour combined with baking powder and the crumbled cheese.
Butter a round 28–30 cm baking tin. Add 2 filo sheets and spread over 5–6 tbsp filling.
Add another 2 sheets and more filling. Halfway through the layers, insert 8–10 lucky fortunes.
Scald a coin in boiling water, wrap it in foil and place it in the tin.
Continue layering pastry and filling. Leave the final 2 sheets unfilled and brush them with melted butter.
Place on a low shelf in an oven preheated to 180°C, using top and bottom heat or a fan setting.
Bake for 25–30 minutes. Cover with a cloth and rest for 10 minutes before slicing.
