700 g pork shoulder, neck or belly
1 onion
2 tbsp oil
100 ml red or white wine
1 tbsp tomato paste
1 bay leaf
2 allspice berries
1–2 tsp paprika
1 tbsp flour
25 g butter
1 tsp salt
Ground black pepper to taste
Cut the pork into cubes and season with salt and ground black pepper. Finely chop the onion.
Heat the oil in the multicooker. Fry the meat with the onion on the sauté programme for 5–7 minutes. Do not stir the meat for the first 2 minutes: let a crust form. Then stir and continue frying.
Once the meat has browned, pour in the wine and boil for 1 minute.
Add the tomato paste, bay leaf, summer savory and paprika. Stir and select the pork cooking programme. Do not add any water to the stew.
If there is no pork programme, pressure-cook for 15 minutes. Once the meat is cooked, add the flour and butter. Heat until the stew boils and thickens.
